A one-semester independent project under faculty supervision which meets with the approval of Program Director.

Examination and application of counseling skills, counseling strategies and counseling theories needed to promote health behavior change. Students will be guided in the development of a personal counseling style and philosophy. Focus on interactive learning of the counseling process, including role-play and skills practice.

Examination of the role of nutrition in nutrition support and critical care in various disease states. (Prerequisite: NED 645 or R.D.)

Overview of the principles of food service management. Topics include functions of management, management theories, HR functions, financial management and budgeting, organizational design, and procurement processes.

Requires acceptance into the Dietetic Internship Program; Provides an orientation to the internship process and requirements, and overview of topics and skills that will be applied to the internship experience.

Topics in Applied Nutrition is an advanced course designed to build upon foundational concepts in medical nutrition therapy. Students will apply critical thinking skills to real-world patient cases to develop personalized, evidence-based nutrition care plans that address a wide range of health conditions. Emphasis will be placed on the integration of clinical knowledge, evidence-based literature, and practical problem-solving. This course is designed to prepare students for the complex, dynamic nature of nutrition practice in clinical settings.

An evaluation into the role of nutrition in the pediatric patient population. Reviewing pediatric growth, development, nutrition assessment, and therapeutic nutrition interventions in various clinical conditions and pathological states.
