Topics in Applied Nutrition is an advanced course designed to build upon foundational concepts in medical nutrition therapy. Students will apply critical thinking skills to real-world patient cases to develop personalized, evidence-based nutrition care plans that address a wide range of health conditions. Emphasis will be placed on the integration of clinical knowledge, evidence-based literature, and practical problem-solving. This course is designed to prepare students for the complex, dynamic nature of nutrition practice in clinical settings.
An evaluation into the role of nutrition in the pediatric patient population. Reviewing pediatric growth, development, nutrition assessment, and therapeutic nutrition interventions in various clinical conditions and pathological states.
Overview of nutritional needs of adults as it relates to obesity and weight management. Topics include weight inclusive practice in healthcare and diatetics, biology of obesity, multilevel interventions to manage weight, commercial and non-commercial weight loss programs, current fad diet trends, bariatric nutrition, and pharmacotherapy and surgical management of obesity.
Overview of the fundamental theories and processes of nutrition education for individuals and groups. Includes approaches to needs assessment; program planning and design, population-appropriate interventions, evaluation and assessment.
Overview of practice-based outcomes research and its applications to the field of nutrition education. Development of research proposal for NED 690 thesis project. Prerequisite: completion of core course requirements and concentration requirements. (Fall semester only)
Action research in the field of nutrition/nutrition education is presented. Students develop and present an action research project utilizing skills and knowledge gained from all graduate courses. Prerequisite: student’s final semester with a maximum of four other credits needed for completion of the degree.
